Lets turn packaged Cashew Apple Squash to a boozy Cashew Fruit Wine

One of Goa's best and beloved summer boozy drinks is Urrak made from the fruit of the cashew nut called the cashew apple. It is one of our favourites, and we were determined to make it at home using the Ultimate Brew Bag. So today we are going to share with you the recipe and walk you through a homemade version of Urrak.


Since home distillation is illegal in India, this is the closest we can come to making Urrak at home without doing anything illegal. And just like Urrak is best consumed fresh, the cashew wine from this recipe will taste like Urrak for two weeks after bottling. Aging it beyond that will give you a real cashew wine, which is a delight to have in itself. Try it with a bottle after you make your first batch.

Making the Cashew Urrak Fruit Wine

Ingredients

  1. One 700ml bottle of Cashew Apple Squash by PRAKRITHI FOODS or you can use this Cashew Fruit Syrup by Saguna Baug

  2. 2.3 litres of drinking water

  3. 300gm of sugar (using powdered sugar helps dissolve faster)

  4. One Ultimate Brew Bag


Equipement

  1. 3 litre glass jar for fermentation

  2. Airlock

  3. Siphon

  4. Glass bottles for your wine


Other than the cashew squash, water and sugar, our Ultimate Brewing Kit has everything you need to follow this recipe and make a delicious cashew fruit wine.



PRO TIP You can swap out the cashew squash and water mixture for a mixture of 2.5 - 3 litres of fresh cashew fruit juice and water if you can get your hands on some fresh cashew apples.


How to make Homemade Urrak?

Day 1: Preparation (1 hour)

  1. Start with cleaning and sanitising the 3L fermenter jar, its lid, and the muslin cloth.

  2. Add all the water to the jar

  3. Now mix in 700ml of Cashew Apple Squash

  4. Grind 300gm of sugar and add it to the mixture.

  5. Stir it or cover the lid and give it a good shake to dissolve all the sugar.

  6. Empty the contents on 1 Ultimate Brew Bag into the fermenter and mix it throughly.

  7. Cover your fermenter jar with the muslin cloth with the help of the rubber band.

  8. Store the fermenter jar in a cool place away from direct sunlight.


Day 2: Fermentation (4-5 days)

  1. Clean and sanitise he fermenter lid and airlock

  2. After about 12-24 hours once you see bubbles in the fermenter, remove the muslin cloth and tightly close the lid of your fermenter.

  3. Fill water in the airlock below the max level.

  4. Attach the airlock to the fermenter through the grommet hole and making sure it is a secure fit.

  5. For the next 3-4 days stir the wine in the fermenter jar by using a sanitised spoon or stirrer or by swirling the fermenter jar.

Day 6: Cold Crashing (1-2 days)

  1. Its been 5 days since your Urrak has been fermenting. Now its time to remove the airlock, empty the water out, clean and store it.

  2. Cover the hole in the grommet with a sanitised rubber cork.

  3. Carefully place your fermenter in your fridge.


Day 8: Bottling, Storage & Drinking (1 hour)

  1. It take 1-2 days for the wine to clear and for the yeast and other dissolved solids to settle down.

  2. Once its done, you can proceed to bottle the cleared part of the wine using a cleaned and sanitised siphon, funnel, muslin cloth, bottles and bottle caps.

  3. Store the bottled wines away from direct sunlight in a cool place.

  4. Drink it chilled and keep refrigerated after opening.



PRO TIP Try adding a green chilli to you glass when having this wine.


Notes & Tips

  • Just as Urrak is meant to be consumed fresh, this cashew wine will taste like fresh Urrak for about two weeks after you bottle it.

  • Aging this cashew wine beyond 2 weeks will give you a real clear cashew wine, which is a delight to have in itself. Try it with one bottle after you make your first batch and let us know which you like more in the comments.
